Sandwich
2 onions, large, coarsely chopped
1½ cups packed fresh parsley sprigs
1½ pounds ground beef
1 egg, large, lightly beaten
1 tsp salt
6 whole pita breads
2 TBS olive oil

Tahini sauce
⅓ cup tahini
2 garlic cloves, minced
¼ cup lemon juice
2 TBS water
⅛ tsp salt

grill (barbeque or oven)
meat thermometer

Directions:
Directions:
Combine the Tahini sauce ingredients to serve with the sandwiches.

Place onions in a food processor; pulse until finely chopped.

Remove and pat dry; transfer to a large bowl.

Add parsley to processor; pulse until minced. Stir into onions.

Add beef, egg and salt. Mix lightly but thoroughly.

Slice pitas horizontally in half. Spread bottoms with meat mixture to edge.

Replace pita tops; press lightly to adhere.

Brush outsides of sandwiches with oil.

Grill sandwiches, uncovered, over medium heat until a thermometer inserted into meat mixture reads 160°. (This will take around 10-12 minutes.) Turn the sandwiches every 2 minutes.

Cool slightly before cutting into quarters.

LEBANON

Lebanon is an extremely small (by area) country in the Middle-East. Lebanon borders Israel and Syria. Common Lebanese languages are Arabic, French, English, and Armenian.

Almost 3.8 million people live in this little country that has many ancient Roman ruins for tourists to see. There are also ancient castles, limestone caves, famous churches and mosques, ski resorts, and lovely beaches. Unfortunately, however, this beautiful country has had many wars, as well as internal turmoil, for a very long time.

Lebanese cuisine has become increasingly popular in America, especially from food trucks and street vendors. Lebanese cuisine is famous for using lots of whole grains, fruits, veggies, and seafood.

POPULAR LEBANESE CUISINE

Popular Lebanese dishes include:
--Tabbouleh (a spread made of parsley & mint)
--Fattoush pitas (lettuce, cucumber, tomatoes, & fried pita bread)
--Labneh (creamy, tangy yogurt spread especially popular for breakfast)
--Hummus (chickpea dip)
--Muhammara (roasted red pepper & walnut dip)
--Manakish (breakfast "pizza" with toppings like dried or fresh yogurt, cheese, and vegetables)
--Kaak (flatbread that resembles the shape of a purse)
--Chanklich (cheese made from cow or sheep milk)
--Shawarma (beef, chicken, or lamb "burritos" filled with Mediterranean veggies)
