4 slices sourdough bread
¼ cup butter, softened
½ cup refrigerated pimiento cheese
2 TBS pepper jelly
6 cooked thick-sliced bacon strips
pepper jelly, extra (if desired, on the side)

Directions:
Directions:
Spread both sides of bread slices with butter.

In skillet, toast bread on 1 side over medium heat until golden brown, 3-4 minutes.

Remove from heat; place toasted side up.

Spread cheese over toasted bread slices.

Top the slices with jelly, and then with bacon. Make into sandwich.

Cook again on skillet until bread is golden brown and cheese is melted, about 3-4 minutes on each side.

If desired, serve with additional jelly.

WHAT IS PIMIENTO CHEESE? (other than being hard to spell)

Pimiento cheese is a cheese relish. The first pimiento cheese came from the northern USA.

In popular Southern cuisine, it is traditionally made of cheddar cheese, pimiento cheese, and mayonnaise. However, in other regions of the United States, the relish can consist of different ingredients.

The original pimiento cheese was made by an American-Greek man in South Carolina named Nick Rangos. Nobody knows for sure what ingredients were in his secret recipe, but pimiento cheese is proudly referred to by natives of the Carolinas as "southern cavier".

Food Network® Sunny Anderson uses garlic, red onion, paprika, and celery seeds in her variation. Food Network® Ree Drummond uses cream cheese, dijon mustard, dill, Monterey Jack cheese, and adobo sauce in hers.

While recipes widely vary for this cheese, we're pretty sure they're all unhealthy! :)
