1 c. Milk (can use almond milk)
1 c. Unsweetened Applesauce
1/3 Pure Maple Syrup
2 Eggs
1 tsp Vanilla
1 Tbsp Butter, melted
1 1/2 c. Old Fashioned Rolled Oats
1 1/2 tsp Cinnamon
1 tsp Baking Powder
1/4 tsp Salt
1 1/2 c. Fresh or thawed frozen blueberries

Important: This is a pot-in-pot recipe!!

Lightly spray a 1 1/2 quart or larger heat safe baking dish with nonstick cooking spray and set aside.

In a large mixing bowl, combine milk, applesauce, maple syrup, eggs, vanilla, and butter. Mix well.

Add oats, cinnamon, baking powder, and salt. Whisk to combine.

Pour into prepared dish.

Add 1 1/2 c. water to Instant Pot and place trivet inside. Use a silicone or foil sling to lover dish into the pot for easier removal.

Close and cook on high pressure for 25 minutes. Allow natural release for 10 minutes, then do a quick release.

Serve hot with whipped cream, sliced almonds, blueberries, or banana slices.

Store leftovers in fridge for up to 5 days. Reheat in microwave with a little milk.
