2 whole beets
1-2 small potatoes
1 large carrot
¼ cup finely chopped mixture of onions and bell peppers
3 Tbsp. mayo
a dash of vinegar and of lime juice,
chicken bouillon
Directions:
Directions:
Boil potatoes, beets, and carrots in plain water; peel and dice. Add bell peppers and onions. Mix mayo with a bit of vinegar and lime juice and mix into salad. Season with chicken bouillon to taste.
