2 (6-oz) boneless pork chops
1 tbsp raw pine nuts
2 tsp avocado oil
⅓ cup fresh basil leaves
½ tbsp fresh lemon juice
¼ tsp salt
¼ tsp pepper
1 clove garlic, minced
2 tbsp sun-dried tomatoes in oil, drained
2 tbsp extra virgin olive oil

Directions:

Sprinkle pork lightly with salt and pepper.
Toast nuts in a dry skillet over medium-high heat 2 to 4 minutes or until fragrant. Remove from skillet.
Cook pork in hot avocado oil in skillet over medium-high heat 4 to 5 minutes per side or until done.
Pulse nuts, basil, lemon juice, salt, pepper, garlic, tomatoes, and olive oil in a food processor until smooth.
Serve pork with pesto.
