1 cup vegetable oil
2 cups granulated sugar
2 eggs
1 teaspoon pure vanilla extract
2 cups unbleached all-purpose flour, plus more for dusting the pan
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon kosher salt
4 cups peeled, cored, and diced Granny Smith apples
1 cup chopped pecans
Softened butter for greasing the pan
Cream Cheese Frosting, (see recipe)

1). Preheat the oven to 350 degrees. Grease a 9- by 13-inch cake pan with softened butter, then dust with flour, shaking off any excess. In a medium bowl, peel, core and chop the apples and set aside. In the bowl of an electric mixer fitted with the paddle attachment, on medium-high speed, beat the oil and sugar until creamy, about 2 to 3 minutes. Turn the mixer to medium speed and add the eggs one at a time, beating for 1 minute after each addition. Stir in the vanilla.

2). In a medium bowl, sift the flour, cinnamon, soda and salt. With the mixer on low speed, gradually add the flour mixture in 3 batches, mixing only until just combined after each addition. The batter will be very thick. Fold in the apples and chopped pecans by hand using a wooden spoon. Spread the batter into the prepared pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool on a wire rack. Once the cake is cool frost with Cream Cheese Frosting.
