Spicy Thai Basil Chicken Recipe

1/3 cup chicken broth

1 tablespoon oyster sauce

1 1/2 tablespoon soy sauce

1/2 tablespoon rice vinegar

splash of lime juice

! teaspoon brown sugar

1 teaspoon white sugar

1 teaspoon Thai chili paste

2 tablespoons oil

1 pound skinless, boneless chicken thighs - cut into bit size pieces

1/4 cup shallots - minced

4 cloves garlic - minced

1 tablespoon minced Thai chilies (can substitute serrano)

1 cup or so sliced basil leaves

1-2 cups hot cooked rice

Whisk together chicken broth, oyster sauce, soy sauce rice vinegar, lime juice, white sugar, and brown sugar in a small bowl

Heat large skillet over med-high heat. Add the oil. Add chicken and stir fry until it loses its raw color-- 2-3 minutes

Stir in shallots, garlic and chilies

Cook on med-high until some of the juices start to carmelize in the bottom of the pan--2 -3 more minutes

Add tablespoon of sauce. Cook and stir until sauce starts to carmelize -- 1 min or so

Pour in the rest of the sauce. Cook until the sauce glazes onto the meat - 2-3 min

Remove from heat

Stir in basil until they wilt.

Serve over rice

You can alter the spiciness by changing the amount of chili paste and chilies. You don't have to use chili paste at all

The amounts of liquids for the sauce need to be fairly accurate

Don't use too much oil because you need the carmelizing to happen
