5 Cups thinly sliced potatoes
Butter
4 Tbsp. Flour
1 1/2 Cup Milk
1 tsp salt
Dash Cayenne pepper
1 Cup Grated sharp cheddar cheese
1/2 cup cheese
Paprika

Directions:
Directions:
Slice potatoes a day ahead and soak in lightly salted water to release starch.
Melt butter in a small saucepan and blend in flour
Add all of the milk while stirring with whisk then whisk in salt and pepper
Cook on low heat, whisking, until just starting to boil
Turn off heat and stir in cheese
Layer half the potatoes in a greased casserole dish
Polar half the cheese sauce evenly over potatoes
Layer the rest of the potatoes and cheese sauce
Bake covered at 350 for 35 minutes
Uncover, add remaining cheese and sprinkle paprika on top
Bake another 75 minutes uncovered
