1 egg, beaten
1 c. milk
1 cup of crushed saltine crackers
3/4 tsp. salt
pepper to taste
1 (17-ounce) can of creamed corn
1/4 c. onion, finely chopped
3 tbsp. of chopped pimento (optional)
1 tbsp. melted butter

Directions:
Directions:
Preheat oven to 350 ºF.

1. Combine egg, milk, 2/3 c. of cracker crumbs, salt and pepper.
2. Stir in corn, onion, pimento; mix well.
3. Put mixture in greased 1 quart baking dish.
4. Toss melted butter with remaining 1/3 c. cracker crumbs and sprinkle on top of corn mixture.
5. Bake for 60-75 minutes or until stiff.
