1 cup minus 1 TB milk
2 cups sugar
1/8 tsp salt
2 ounces grated unsweetened chocolate
2-4 TB butter
1 tsp vanilla
1/2 to 1 cup nuts of your choice (optional)

In a large heavy saucepan, bring the milk to a boil and removed from heat. Stir in the sugar, salt, and chocolate until dissolved. Bring to a boil and cook covered 2-3 minutes until the steam washes down from the sides of the pan any crystals which may have formed. Uncover, reduce heat and cook without stirring to a soft ball stage, 234º. When nearing that temperature, there is a fine overall bubbling with, simoultaneously, a coarser pattern, as though the fine bubbled areas were being pulled down for quilting into the coarser ones. Remove from heat without jostling or stirring. Cool to 110º. You may hasten this process by placing the hot pan in a large pan of cold water until the bottom of the pan has cooled. Add the butter, beat the fudge partially, then add the vanilla. Beat until it begins to lose it's sheen. Do this until the the drip from the spoon holds its shape when turned upside down. Add the nuts, if desired. Pour into a buttered pan and cut into squares before it hardens.

I used to make this concoction when I was a teenager, having discovered it and all the ingredients on a lazy afternoon. Since we did not have a candy themometer, I relied on the soft ball stage method, meaning that dropping some in a glass of cold water would make it for a small, soft, ball. This was not terribly reliable, but the taste was always good despite whatever consistency I achieved. My little sister Dolly loved this stuff and always asked me to make it! Years later I looked for the recipe and discovered it was only published in the 1975 version of The Joy of Cooking....so I tracked that down and gave the book to Dolly! I haven't yet tried to make this again, but will look for another lazy afternoon and give it a shot!
