2 T Peanut oil

1 lb Celery chopped or shredded or another vegetable or mix of vegetables.

Sauce:
1 T Soy Sauce
4 T Sugar
3 T Vinegar
½ tsp Salt




Thicking:
1 T Cornstarch
2 T Water
1 or 2 drops of Hot Sauce









Directions:
Directions:
Use the hot oil method to cook the vegetables. The pan should be hot before adding the oil (2 T of oil). The oil seals in the juices of the vegetable and preserves Vitamin C. Add the vegetables and stir constantly.

Prepare all before starting:
1. Heat skillet (375º). Add oil, heat thoroughly.
2. Add celery and quick fry for 4 minutes.
3. Add sauce and quick fry for 2 minutes.
4. Add thicking and quick fry for 1 minute.
