2 Navel Oranges (or mandarin oranges)
4 oz pomegranate arils ( I use the ones you can buy versus having to get an actual pomegranate)
5 oz salad greens (I use the spring mix)
4 oz. pistachios, roasted and salted (I also buy the already shelled bag for this)
2 oz. crumbled goat cheese (about ½ C)

Dressing
5 T Fresh squeezed orange juice (about half a large navel orange)
4 t honey
3 ½ t champagne vinegar
1 T canola oil (I have used olive oil as well)
½ t smooth Dijon mustard
1/8 t kosher salt
1/16 t black pepper

Directions:
Place greens in a large serving bowl. Leave space for a small bowl in the middle for salad dressing (this gives it the wreath feel). Cut oranges removing as much of the peel as you can. Arrange oranges, pistachios and pomegranate arils over the greens and sprinkle with goat cheese.

For dressing- Whisk together orange juice, honey, champagne vinegar, canola oil, mustard, salt and pepper until the salt has dissolved and the dressing is emulsified. Dress salad just before serving or pass around the table.
