6 large whole chicken breasts, cooked and cubed
2 large cans pineapple tidbits
2 pkgs Rotelli (corkscrew) pasta, cooked and cooled (tri-color looks best)
2 large unpeeled yellow apples, cubed
2 large unpeeled red apples, cubed
2 cup celery, chopped
2 cans sliced water chestnuts
1 10 oz can cashews, lightly chopped
2 cups red grapes, cut in half
2 cups green grapes, cut in half
1 16 oz jar coleslaw dressing (usually near the salad dressings – Marzetti’s is the best brand, and low fat version if fine).
1 cup Best Foods Mayonnaise

Directions:

Drain pineapple, reserving juice. Soak apples in pineapple juice for about 10 minutes then drain. Stir coleslaw dressing and mayonnaise together until smooth. Mix all ingredients EXCEPT cashews in a very large bowl (or you may need to use two bowls). Stir in dressing mixture. Refrigerate until serving. Add cashews just before serving.
