Speedy Pat-In Pastry Crust

In a 9-inch pie plate, mix with a fork:
1 1/2 cups flour
1 1/2 tsp white sugar
1/4 tsp salt

Combine slightly less than 1/2 cup oil and 3 TBL cold milk in a cup. Beat with a fork until creamy. Pour all at once over dry ingredients & mix with a fork until it is dough. Push dough with your fingers to line bottom & sides of pie plate evenly. Continue with your favorite pie filling recipe or bake at 425 degrees for 10 minutes for a baked crust.



Oil Pastry

2 1/4 cups flour
1 tsp salt
1/2 cup oil
6 TBL COLD milk

In a mixing bowl stir together dry ingredients. Pour milk and oil in a measuring cup (do not stir); add all at once to flour mixture. Stir lightly with a fork. Form into 2 balls. Flatten slightly with hands.

Roll each ball out with a rolling pin on a floured surface. To make it easier, roll dough between two squares of waxed or parchment paper. Fit to pie plate and decorate as desired after filling with pie filling. Bake as in above recipe. Makes two 9-inch single-crust pastries or one 9-inch double crust pastry.

Electric Mixer Pastry

1 3/4 cups flour
3/4 cup shortening
1/3 cup cold water

Combine dry ingredients; add shortening. Beat at low speed of electric mixer till pieces are the size of small peas. Add water. Beat at low speed just till a dough forms (15 to 20 seconds). Form dough into a ball with hands. Divide into 2 balls and roll out. Makes two 9-inch crusts.

Graham Cracker Crust

18 graham crackers
1/4 cup sugar
6 TBL butter, melted

Crush crackers into fine crumbs. Measure 1 1/4 cups crumbs. Combine crumbs and sugar. Stir in melted butter; toss to thoroughly combine. Press onto the bottom and sides of pie plate. Chill about 1 hour or till firm. Or, bake in a 350 degree oven for 6 to 9 minutes or till edges are brown.
