4½ c frozen sweet cherries
¾ c sugar
¼ c corn starch
1 T lemon juice
Pie crust for a 2-crust pie

Thaw cherries before preparing pie. Cook cherries in a saucepan over medium heat, stirring continually, until they start to simmer and get juicy. In a separate bowl, combine sugar, corn starch and lemon juice. Remove cherries from heat and add sugar mixture. Combine thoroughly. Return to low heat and bring to a simmer. Keep cooking until the mixture thickens, stirring often. Remove from heat and let cool completely before filling the crust. Top crust with an egg wash and sprinkle with demerara sugar.

Bake for 20 minutes at 400º then 30 to 35 minutes at 375º.
