1 C softened butter
3 cloves garlic
juice & zest of one lemon
8 oz. jar of roasted red peppers, drained with oil reserved
3/4 C fresh herbs of choice (parsley, green onion & cilantro are good)
1 t. chili powder
1/4 t. cayenne
1 t. salt

Directions:
Directions:
Place all ingredients in a food proessor and blend until smooth. The reserved oil may help to emulsify.
Refrigerate until ready to use.

I make a double or triple batch and keep it in the fridge to have on hand. You can throw a dollop in a skillet and saute with shrimp, chicken, beef or just melt and toss with pasta.
