1 lb breakfast sausage (optional)
½ C butter (1 stick)
½ C flour
5 C milk
2 tsp kosher salt
1 tsp pepper

Directions:
Directions:
Crumble and cook sausage in skillet over medium high heat, breaking up sausage as it cooks, until completely done and browned. Remove sausage from skillet and keep warm.

Reduce heat to medium and melt butter. Slowly add flour, a little at a time, whisking constantly, and cook for 1-2 minutes to allow the starchy taste to dissipate.

Slowly add milk, continuing to whisk constantly while gravy thickens. If gravy gets too thick, add more milk, a little at a time, until you get the right consistency.

Reduce heat to simmer/low and add salt, pepper and sausage (yep, keep whisking). Cover with lid until ready to serve.
