3 egg yolks
1 tsp lemon juice
1/2 tsp salt
1/8 tsp cayenne pepper
1/4 tsp mustard powder
8 tbsp butter

Directions:
Directions:
In blender, combine egg yolks, lemon juice, salt, pepper, and mustard. Blend for about 20 seconds.

Melt you butter, put blender on LOW speed and slowly pour the hot butter a little at a time to combine. (Pour too fast and you will cook the egg and have to start over.) You will see the sauce start to thicken, turning pale yellow. Taste and adjust seasoning to the way you like it.
