2 T. Olive Oil for sauteing
1 yellow onion diced
2 cloves garlic minced
8 boneless skinless chicken thighs
2 28-oz cans whole tomatoes (or 1 whole and 2 15-oz stewed)
½ bunch parsley coarsely chopped
1 bunch fresh basil coarsely chopped
Salt and pepper to taste

Heat oil on medium heat
Saute onions and garlic until just soft
Sprinkle chicken with a LITTLE salt and pepper and add chicken thighs to brown on both sides
Add tomatoes and stir
Add parsley and basil and stir until incorporated
Bring to a boil then lower to a simmer. Cover and stir occasionally.
Cook for at least one hour.

Henry and I love themed dinners. We've learned how to cook Greek, Italian, Chinese, as well as Jewish recipes from around the world. We rounded out our chicken cacciatore with garlic herbed Challah and a large Italian chopped salad. We added a strawberry tart for dessert.
