For apple mixture:
3 cups apples, peeled and sliced
¼ cup brown sugar, packed
2 tbsp. lemon juice
¾ tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. salt


1⅓ cups flour
½ cup sugar
1½ tsp. baking powder
½ tsp. salt
⅔ cup milk, lukewarm
1 egg
6 tbsp. butter, melted
1 tsp. vanilla
coarse sparkling sugar, optional

Directions:
Directions:
1. Preheat oven to 350º. Spray a 10 inch cast iron skillet with cooking spray.
2. Combine sliced apples with brown sugar, lemon juice, spices and salt. Set aside.
3. Combine the flour, sugar, baking powder and salt. Set aside.
4. Mix the milk, egg, butter and vanilla. Add to the flour mixture. Stir until combined.
5. Pour into skillet. Spoon the apple mixture onto the batter.
6. Press apples into the batter. Sprinkle with sugar if desired.
7. Bake 40 minutes until light brown and cake tester comes out clean.
8. Remove from oven and cool for 5 minutes. Loosen the edges from the pan.
9. Cool 20 minutes more. Remove from pan carefully or can be served right from pan.
 

Cinnamon Roll in Skillet

¼ tsp. salt
¾ cup milk
1 egg
¼ cup unsalted butter, melted
1 tsp. vanilla



Cinnamon Sugar Topping:
¼ cup unsalted butter, melted
¼ cup brown sugar, packed
1 tsp. cinnamon

Icing Drizzle:
1 cup confectioners' sugar
1-2 tbsp. milk
1 tsp. vanilla

Directions:
1. Preheat oven to 350º. Spray a 10 inch cast iron skillet with cooking spray.
2. In a large mixing bowl, add flour, sugar, baking powder and salt. Stir to combine.
3. Add milk, egg, butter and vanilla to dry ingredients. Stir well to incorporate.
4. Pour batter into skillet. Use the handle of metal spoon to poke holes throughout batter.
5. In a small bowl, add topping ingredients and stir well. Spoon into holes.
6. With a butter knife swirl the topping into the batter.
7. Bake for 27-30 minutes. Remove from oven and allow to cool.
8. Carefully remove from skillet. While cake is cooling, combine icing ingredients.
9. Drizzle over top. Slice and serve warm.

During the Pandemic Grandma tried many different recipes. The two skillet pan recipes are among many new recipes throughout the cookbook. Today cast iron skillets are oven safe. They are convenient to use and add a slightly crusty bottom to the pastry.
