7-9 ice cream sandwiches, frozen
Ice cream of choice, 2 flavors
Oreo cookies, optional
chocolate or caramel syrup, optional
cool whip, thawed

Directions:
Directions:
1. Prepare a 9 inch spring form pan: Spray around side of pan; cut parchment paper in pieces; line sides on top of spray with the pieces of parchment paper.
2. Crush 15 Oreos. Place crumbs in a bowl. Add 1tbsp. milk to soften crumbs.
3. Cut ice cream sandwiches in ½ lengthwise then in ½ widthwise. (4 pieces for each)
4. Place ice cream cut ice cream sandwiches (cut side in) along side of pan.
5. Put crumbs in middle and press down. Place in freezer for one hour.
6. Let ice cream soften. Put ice cream on top of crumbs ½ way up. Smooth ice cream with a spatula.
7. Between the layers of ice cream, add toppings and/or more crumbs if desired.
8. Put in another flavor of ice cream to just under level of top of bars. Smooth evenly.
9. Add a layer of Cool Whip and decorate as desired. See photo on right.
10. Freeze overnight. Remove side of pan and peel off parchment paper. Slice and serve.
 

Ice Cream Sandwich Cake

24 vanilla ice cream sandwiches
2 (8 ounce) containers Cool Whip

1 (12 ounce) jar hot fudge ice cream topping
¼ cup chopped pecans, walnuts, or mini M&Ms

Directions:
Directions:
1. Thaw Cool Whip in refrigerator. Have 9x13 inch glass dish ready.
2. Arrange 12 ice cream sandwiches in the bottom of dish. You will need to cut one of the ice cream sandwiches in half in order to fit in the dish.
3. Allow the ice cream sandwiches to soften a bit, then with the back of a spoon, gently press them down a little bit.
4. Top with a layer of Cool Whip and drizzle with topping of choice.
5. Repeat the layers with remaining ice cream sandwiches, Cool Whip and other toppings.
6. Sprinkle with your choice of M&Ms, coarsely crushed Oreo cookies, Heath toffee bits, chocolate chips, crushed waffle cones, chopped peanuts or Reese's pieces.
7. Freeze 2-3 hours or overnight to give time to firm up before slicing and serving.

The first recipe, prepared in a spring form pan, contains ice cream sandwiches, ice cream and cool whip. The left photo shows the cake with just the Cool Whip topping. The right photo, from a magazine, shows the cake with added syrup and extra toppings. The second recipe, prepared in a 9x13 inch baking dish, contains only ice cream sandwiches and Cool Whip. The Cake is an easy no-bake treat that is a great alternative to an ice cream store bought cake. Either way it is yummy!
