3/4 lb bacon
2 lbs leeks (white part only - 3 large leeks) - cleaned & diced
2 lbs russet potatoes peeled and diced
2 cloves garlic chopped
3 - 4 sprigs thyme (or 1 tsp)
1 bay leaf
Salt & pepper
5-6 cups chicken broth
1 cup whipping cream
chopped Parsley for garnish

Directions:
Directions:
1. Turn Sauté on Instant pot. When hot, fry bacon until just crispy. Remove bacon with slotted spoon. Pour out bacon fat leaving 3 Tbsp.
2. Add leeks to pot and sauté. Add 3 cloves garlic chopped and cook for approx 10 minutes.
3. Add potatoes, thyme, bay leaf, salt & pepper. Then add chicken broth.
4. Pressure cook for 10 minutes on high pressure.
5. Quick release and remove thyme and bay leaf.
6. Blend to smooth using immersion blender. (Or use regular blender).
7. Add Whipping cream and heat through. Add salt and pepper to taste.
8 Garnish with parsley & bacon.
