¾ cup sugar
2 Tbsp vanilla
½ cup butter or margarine, melted and cooled
½ tsp anise seed (optional)
1¾ cups all purpose flour
2 tsp baking powder

Pre heat pizzelle maker.
Melt butter and set aside.
Beat eggs and sugar until light yellow. Approx 2-3 minute.
Add melted butter and vanilla, anise if you are using.
Beat until blended.
Sift together 1 cup of the flour and the baking powder, then combine with wet ingredients.
Fold together until just blended, add remaining flour and fold in until just incorporated.

Place a heaping Tbsp of batter on the center pattern.
Bake until golden brown approximately 40-50 seconds.
Remove and cool on a rack.
Repeat until all batter used.

This recipe is a base for many flavours.

If using anise, amount can be put in to taste.

Pizzelles can be rolled while warm, into a cannoli type tube or draped over a glass to make a small dessert bowl.

CITRUS PIZZELLES

Omit vanilla and anise. Add 1 tsp finely grated lemon/orange/ lime zest o extracts. Or to taste.

CHOCOLATE PIZZELLES

Omit anise. Add 3 Tbsp cocoa and 2 tsp instant coffee dissolved in vanillA.

CAPPUCCINO PIZZELLES

Omit anise. Add 2 tsps instant espresso coffee, dissolved in 2 Tbsp coffee liqueur or vanilla, and 2 tsp cinnamon.

GINGERBREAD PIZZELLES

Omit vanilla , sugar, anise.
Add ½ cup white sugar, ¼ cup brown sugar, ½ tsp cinnamon, ¼ tsp cloves, ½ tsp ginger, ⅛ cup molasses.
