short crust pastry for singe nine inch pie crust
4 c raw peeled and sliced potato
1 chopped medium onion
4 oz grated swiss cheese
2 tbsp all purpose flour
1/2 tsp salt
1/8 tsp nutmeg
black pepper
1 c diced cooked ham, frankfurters or bacon
2 tbsp butter
3/4 c milk
egg glaze
1/3 c cream

Directions:
Directions:
Prepare pastry and set aside. Cover sliced potatoes with cold water. Toss cheese, flour, salt, nutmeg and pepper. Butter an eight inch by eight inch by two inch by two inch baking dish. Drain potatoes well. Layer potatoes in dish with onion and cheese mixture and ham. Top layer should be potatoes. Pour milk over mixture and add pastry crust. Cut vents for steam and brush with egg glaze. Bake in oven at 425ºF for 10 min. Reduce heat to 350ºF and continue cooking for 50 min or until pastry is golden and potatoes are cooked.
