Ingredients: Nonstick cooking spray 1 tablespoon olive oil 1 12 ounce package cooked smoked chicken sausage with apple, cut into bite-size pieces 1 ½ cups peeled and chopped sweet potato (1 large) ¾ cup chopped red sweet pepper (1 medium) ⅓ cup chopped onion (1 small) 8 eggs, lightly beaten ½ cup low-fat milk ¾ cup shredded reduced-fat cheddar cheese (3 ounces)

Directions:Step 1 Coat a 3 1/2- or 4-quart slow cooker with cooking spray; set aside. In a large nonstick skillet heat oil over medium heat. Add sausage; cook for 6 to 8 minutes or until brown. Add sweet potato, sweet pepper, and onion; cook for 3 to 5 minutes or just until tender, stirring occasionally. Transfer sausage mixture to the prepared cooker.
Step 2 In a medium bowl combine eggs and milk. Stir in 1/2 cup of the cheese. Pour egg mixture over sausage mixture. Cover and cook on low-heat setting for 2 to 2-1/2 hours or until eggs are set.
Step 3 Sprinkle with the remaining 1/4 cup cheese. Let stand for 10 minutes before serving. |
