6 slices Bacon
3 cups frozen hash browns potatoes
1/2 cup chopped green pepper
1/3 cup chopped onion
6 eggs
1/4 cup milk
salt and pepper
1 cup shredded cheddar cheese

Directions:
Directions:
cook bacon until crisp, remove from pan, drain and dice. leave 2 tbsp dripping in pan. add potatoes, cook, until heated though. add green pepper and onions. Cook 15 to 20 min, or until underside is starting to crisp and brown. Beat eggs, milk salt, pepper. stir in cheese and bacon-pour evenly over potatoes. cover. cook on low 8 to 10 min, or until eggs are set and cheese is melted. if desired, broil lightly to brown. loosen edges, serve in wedges.
