1 tbsp olive oil
3 shallots - minced
1 1/2 cup Orzo
1 clove garlic
1/2 cup white wine
3 cups chicken stock
4 cups baby spinach
1 lemon - juiced - zested
3 tbsp butter
1/3 cup parmesan cheese - grated
salt and pepper to taste

Directions:
Directions:
In a medium skillet, with high sides, heat olive oil. Cook shallots for 1 to 2 minutes or until translucent. Add garlic and cook 1 more minute.

Add the orzo and stir to combine. Add wine and bring to simmer. Cook until wine has been absorbed by pasta, 3 to 4 minutes.

Gradually add the stock, 1 cup at a time, cooking until mostly absorbed before adding additional stock.

When stock has been absorbed and orzo is tender, add in the spinach, letting it wilt. Stir in lemon juice, zest, butter and parmesan.

Stir to combine.
