4 Thin Cut Boneless Pork Chops, about ¼" thick
1 ½ cups Panko Breadcrumbs
3 Large Eggs, Beaten
2 tbsp Olive Oil
Salt to taste

Directions:
Directions:
Place pork on a cutting board, cover with plastic wrap, and use a mallet to flatten and tenderize the pork.

In a shallow dish, add eggs and scramble. In another shallow dish, add panko and olive oil, stir. Microwave panko for 1-2 minutes, stirring every 30 seconds until reaching a light golden brown.

Begin dipping the pork in the egg followed by panko. Press the panko into the pork to adhere.

Use a non-aerosol spray bottle of oil to grease the air fryer basket. Place pork in the basket (mine fit 2 at a time while slightly touching.) Set the temperature to 400 degrees Fahrenheit and the timer to 6 minutes. Flip, and then set the timer for 4-6 more minutes until it reaches a golden brown. If you notice the breadcrumbs looking dry, spray with a bit of olive oil to moisten the panko. Repeat until all pork is cooked.
