3 egg yolks
1/2 cup granulated sugar
1 pt (2 cups) heavy whipping cream
8 0z bittersweet chocolate (60%)

Directions:
Melt chocolate in microwave- 1 minute and then 30 second intervals. Set aside to cool slightly

Whip egg yolks and sugar til form a ribbon - will look plae yellow and volume increased.

Pour in melted chocolate and mix with rubber spatula just until combined.

*Important* add heavy cream slowly to chocolate yolks mixture. A little bit, mix, a bit more, mix. If you do it to fast you will make chocolate chip mousse. Can add more cream as you go once its mixed.

Whip until stiff peaks form.

Can eat then or chill in fridge til ready. I top with unsweetened vanilla whipped cream
