1/4 cup water
2 cups whole mild
4 large eggs
1 tsp vanilla
pinch of salt

Preheat oven to 350º. Stir 1/2 cup sugar wit 1/4 cup water over low heat until sugar dissolves. Increase heat; boil until syrup is a deep amber. (very important) Takes about ten minutes. Divide into 6 individual ramekins, tilt to coat the bottom.

Stir milk and 1/2 cup sugar over low heat until sugar dissolves, not too hot. Whisk and temper eggs until blended. Slowly whisk in milk mixture. Whisk in vanilla and salt Pour into prepared ramekins.

Arrange in a deep 13"x9"x2" pan, pour hot water into pan until it comes up the sides of the cups. Bake until just set 50 minutes or until is set and still jiggles.
