For the apple cider vinegar dressing:
• 1 tablespoon maple syrup
• 2 tablespoons apple cider vinegar
• 1 tablespoon Dijon mustard
• ⅛ teaspoon ground ginger
• ⅛ teaspoon kosher salt
• 6 tablespoons extra virgin olive oil

For the salad:
• 6 cups mixed greens
• 1 cup pomegranate seeds
• 1 shallot, thinly sliced
• 1 Granny Smith apple, thinly sliced
• ½ cup pecans, toasted or glazed
• 2 ounces soft goat cheese, optional, crumbled

Directions:

In a medium bowl, whisk the maple syrup, apple cider vinegar, Dijon mustard, ground ginger, and salt together.

Slowly whisk in the olive oil 1 tablespoon at a time until an emulsion forms and the dressing is fully combined. Set it aside.

Place the mixed greens in a salad bowl or serving platter.

Top with the pomegranate seeds, shallot, apple, pecans, and goat cheese.

Drizzle on the apple cider vinegar dressing to taste and toss.
