One Hour Pizza Recipe

Dough:

1 1/3 cups of bread flour
1/2 cups of semolina flour
2 tsp rapid rise yeast
2 tsp sugar
1/2 cup + 2 TB water (or 5 oz)
1/4 cup of lager (beer)
2 t white vinegar
1 1/2 tsp extra virgin olive oil

Sauce:

28 oz can whole peeled tomatoes smooshed and drained
1 TBSP extra virgin olive oil
3 anchovies rinsed and patted dry (optional)
1 tsp salt
1 tsp dried oregano
1/2 tsp sugar
1/4 tsp pepper
1/8 tsp crushed red pepper flakes

Pizza:
1/4 cup grated parmesan cheese
3/4 cup whole milk mozzerella

Dough:

Let a pizza stone heat up in a 450º oven.
Combine all the dry ingredients in the bowl of a food processor. Mix to combine.
Combine all the wet ingredients in a large measuring cup
With the food processor running, add the wet ingredients and process for 10 seconds
Let sit for 10 minutes.
Add tsp salt and process for 30 to 60 minutes. Should be a ball
Knead briefly and divide in half.
Spray parchment paper and spray on top. Roll to a 10" circle. cover with another piece of parchment and roll to 11 1/2 inches.
Let rise for 30 minutes .
At 20 minutes raise the oven temp to broil.

Sauce:

Add all ingredients to a food process or and process until smooth

Put it together:

Peel off Parchment. Dust with flour and put floured side down on a peel
Add 1/2 cup of sauce and spread to 3/4" from edge
add grated Parmesan cheese
add Mozzerella on top
Switch oven back to bake
Add Pizza to oven immediately
Bake for 8 to 12 minutes rotating half way thru
Turn the oven on Broil again for 10 minutes and repeat with 2nd pizza
