4 peaches firm
1 cup sugar
1 vanilla bean - split/scraped
7 oz raspberries
1/2 cup conf, sugar
1 1/2 cup vanilla ice cream
1 1/2 cups heavy cream
3 oz almond slices


Directions:
Directions:
Bring a large pot of water to boil. Cut peaches in half and remove pit Dip peaches for 3 to 5 minutes.

In another saucepan bring 1 qt. water with sugar and vanilla to boil. Place peach halves, reduce heat and simmer 8 - 10 minutes. Set aside to cool.

Place heavy cream in a cold bowl, whip until foamy, add 2 tbsp conf. sugar and 1 tsp vanilla. Beat until stiff peaks form.

Mix raspberries with 1/2 the lemon juice and confectionary sugar to make a puree. Place peach in bowl, top with ice cream, then top with whipped topping then drizzle the raspberry puree. Top with slivered almonds.
