½ cup butter
4 ounces unsweetened chocolate (see substitute below)
4 eggs at room temp.
¼ teaspoon salt
2 cups white sugar
1 teaspoon vanilla
1 cup sifted all-purpose flour (125 grams)
1 cup chopped pecans (optional)

Melt butter and chocolate in a double boiler. Cool to room temperature (if you don't the brownies will be heavy and dry. If you do not have chocolate you can substitute 8 Tablespoons of cocoa and an additional ¼ cup of butter
Beat eggs and salt in a large bowl until light and foamy. Gradually add sugar while continuing to beat until well creamed. Add vanilla. /can use a whisk of a handheld mixer for the previous two steps. For the rest do it by hand to avoid over mixing.
With a few swift strokes combine eggs/sugar mixture with the chocolate. Before the mixture is even in color fold in the flour. If using pecans add them before the flour is entirely mixed in. It is important not to overmix the batter when adding the chocolate and flour.
Bake in a 9X13 inch pan that has been greased and lined with parchment paper for 25 minutes at 350º F. the center of the pan will be set but not hard.
Cool thoroughly before cutting as the interiors are still moist when fresh from the oven.
Can frost with butter icing if desired.

Do not overbake or the brownies will be dry.
If you want a more cake-like square use an 8X8 or 9X( inch pan.
