1 onion diced
2 stalks celery chopped
4 cloves of garlic, minced
Half a green pepper, diced
Half a red pepper, diced
1 14 ounce crushed tomatoes
4 cups vegetable stock
1 tsp oregano
1 tsp basil
1 tsp thyme
1½ tsp paprika
1/2 tsp. cayenne pepper
2 Bay Leaves
2 Tablespoons Tobasco sauce
2 Tablespoons soy sauce

2 cups uncooked rice
3 cups beans (chick peas, white beans, kidney beans, black beans)
1 tsp salt
¼ cup chopped parsley

Directions:
Directions:
In large pan....

a bit of oil, add onion and garlic, sauce until soft. Add celery & peppers, sauce until just beginning to soften.

Add crushed tomatoes, vegetable stock, herb, spices, sauce and rice; bring to a boil and then reduce heat. Simmer gently until rice is cooked and liquid absorbed, approximately 30-40 minutes.

Once rice is tender, stir in the beans. Give the mixture a few minutes for the beans to heat through.

Option: Serve Tobasco on the side if every one doesn't like it hot!
