Apple Fritter:

2 c. Flour
3 tsp. Baking Powder
½ tsp. Salt
4 tbsp. Sugar
2 tsp. Cinnamon
2 Eggs
1 c. Milk
4½ c. Apples, peeled and chopped
Oil, for frying

Glaze:

4 c. Powdered Sugar
2 tsp. Vanilla
6-8 tbsp. Milk

For the Glaze:

Step 1:

Mix powdered sugar, vanilla, and milk together until smooth and set aside.

For the Fritters:

Step 1:

In a medium bowl, whisk flour, baking powder, salt, sugar and cinnamon together. Set aside.

Step 2:

Add milk and egg to a medium bowl and whisk together until well combined.

Step 3:

Pour wet ingredients into dry ingredients and mix until well combined. Stir in apples, gently.

Step 4:

Drop heaping spoonfuls into oil heated to 375º and fry both sides until golden brown and done. Remove with slotted spoon and place on paper towel lined plate.

Step 5:

Once fritters are still a little warm, dip one fritter at time into glaze and place on a baking sheet lined with parchment or wax paper.

These take longer to cook than normal deep frying it seems, so I fry them about 3-4 minutes per side. When golden brown I take one out of pan and split it in half to see if done on the inside.
