4-5 lb chicken 8 pieces
2 T olive oil
Lg red onion thin slice
3 celery stalks slice
1 1/2 T curry powder
Salt and pepper
2 T tomato paste
28 oz tomato puree
1 c stock or broth
1/2 c raisins
1/2 c raw almonds toasted and coarse lay chopped
4 c cooked brown rice
2 T chopped parsley

Directions:

Season chicken.
Lg Dutch oven over med high heat warm oil until just smoking. Sear chicken until well browned on both sides about 8-10 min per batch.
Transfer to platter and pour off all but 2 T oil.
Heat to med saute onion and celery until soft.
Add curry powder, 1/2 t black pepper, and tomato paste and cook about 30 sec.
Add tomatoes, stock, raisins and bring to simmer.
Nestle chicken in pot, cover and turn to med low. Simmer until fork tender about 45 min.
Transfer chicken to platter, heat to med high and reduce sauce about 5-7 min, stir occ.
Add more salt and pepper if needed.
Stir almonds in to rice. Spoon on plates and top with chicken and sauce. Finish with parsley.
