4 Lg. Eggs
½ tsp. salt
2 c. flour
1 c. cold water
1 c. milk
4 tbsp. melted butter
Oil for frying

Directions:
Directions:
Step 1:

Combine eggs, salt, flour, and water and mix well until smooth.

Step 2:

Add milk and melted butter and mix well again. Cover and refrigerate overnight.

Step 3:

Wipe the bottom of a 7' skillet or crepe pan with vegetable oil (just enough to coat). Ladle about 1/4 cup of batter in pan and swirl batter to cover the bottom of pan to create very thin "pancake". Cook until golden brown on both sides.

Step 4:

Use wax paper to separate crepes when frying so they do not stick together. Chill and then fill with jams, jellies, or Nalashniki stuffing.
 

Bopchi's Nalaschniki Stuffing


Ingredients:

⅓ lb. Farmers Cheese, approximately
16 oz. cottage cheese
White Sugar, to taste
Vanilla Extract, until cheese mixture turns tan

Step 1:

Mix all ingredients together until mixture is tan and somewhat stiff....NOT runny.

Step 2:

Preheat oven to 325º.

Step 3:

Fill crepes with cheese mixture across and off-center of crepe. The line of mixture should be about 1 inch wide. Try not to spread to the edge of the crepe or the filling may leak out. Roll and place in greased baking dish. Bake for 30-45 minutes or until heated through.
