Rub oil on breasts and season.
Bake for 35-40 minutes.

I serve this with roasted veggies, or TJ’s broccoli salad, or cut up for chicken salad or other uses.

Even better: in am, salt chicken and uncover in fridge. When ready oven to 400. Heat skillet over high heat then add oil to coat base of pan. Add chicken breast skin side down and cook undisturbed until easily released from pan 7-10 min. Turn heat down if needed. Turn pieces and cook other side about 5 min longer. Tuck in herbs (sage, rosemary, thyme) and put in oven 10-15 min internal temp 165.
