Spanish Rice Recipe

Ingredients:  
Ingredients:  
1 T olive oil & 1 T butter
1 large or couple small garlic cloves minced
2 cups jasmine rice
Small onion, minced
1 or 2 tomatoes diced
4 cups water
2 heaping teaspoons chicken tomato bouillon
1/4 t dill weed
2 jalapeņos whole
Chopped cilantro- optional

Large skillet with cover

Directions:
Directions:
Melt butter and oil in skillet
Add garlic for a minute then remove but keep for later
Add rice to skillet and stir until rice is just opaque, just before it browns
Add onion and tomato
Add water
Add bouillon, dill weed, whole jalapeņo
Stir to mix and taste for flavor
Add back garlic
Add chopped cilantro
Turn heat to low, cover and simmer 15 minutes
When done, fluff with fork and pierce jalapeņos to relieve juice
