1/2 c margarine or butter
1 c plus 2 tbsp sugar
2 eggs
2 tsp vanilla extract
2 c all-purpose flour
1/2 tbsp baking powder
1/8 tsp baking soda
2/3 c vanilla or plain yogurt
1 tsp cinnamon
1/8 tsp nutmeg
3/4 c peeled and grated apples
1 c frozen blueberries

Directions:
Directions:
Preheat oven to 400ºF. Line a muffin tin with paper liners.
Cream margarine or butter and sugar.
Blend in eggs and vanilla.
While folding in dry ingredients, add yogurt and grated apple.
Gently fold in frozen blueberries. Do not over mix.
Scoop evenly into lined muffin tins and bake until muffins spring back when gently pressed on top, approx. 18-22 minutes.
