1 lb. ground beef
salt and pepper to taste
1/2 c. diced onion
1/2 c. diced celery
1/2 c. ketchup + extra for top
1 egg
dash of Worcestershire
Italian spice seasoning
8 saltine crackers, crumbled
1/2 c. shredded cheese (cheddar, co-jack, your chosing)
1/2 c. oatmeal
dash of cinnamon

Directions:
Directions:
Preheat oven to 350º.

Combine all ingredients in a large bowl. Mix lightly with fork or hands until well incorporated but not overworked. Form meat into a bread/meatloaf pan and bake for one hour. For last 10 minutes of baking, top with additional ketchup and spread evenly over the top.

Let rest 15 minutes before slicing.
