1½ lb. hamburger
1 medium onion, chopped
1 large can (or 2 small cans) of sliced carrots (or frozen carrots)
3 cups mashed potatoes
Butter
Cheddar cheese (optional), shredded
Paprika
Salt
Pepper

Directions:
Directions:
Heat oven to 350º. Saute hamburger and onion. Line a casserole dish with the hamburger/onion mixture. Place carrots on top, followed by a layer of mashed potatoes. Spread butter or cheese on top. Sprinkle with paprika, salt, and pepper. Bake for 20 minutes or until top is brownish.

Not the most flavorful dish, but an inexpensive one that mom made frequently. I still make it from time to time.
