8 boneless, skinless chicken thighs
8 oz. rice noodles
4 scallions, thinly sliced

Marinade:

Finely grated zest of 2 oranges
3/4 c. fresh orange juice
1/4 c. honey
3 tbsp. soy sauce
2 tbsp. sesame oil
1 tbsp. minced fresh garlic
1/4 tsp. crushed red pepper flakes

Rinse and pat the chicken thighs dry. Place in a bowl. Mix all ingredients of marinade and pour over chicken. Cover and refrigerate overnight.

1. Preheat oven to 350º. Arrange chicken in a large, shallow roasting pan and season with salt and pepper to taste. Pour marinade over chicken. Bake chicken until golden brown, basting frequently for about 45 minutes.

2. 10 minutes before chicken is done, prepare rice noodles. Bring large pot of water to a boil. Turn off heat and stir in rice noodles. Let noodles soak until tender for about 7 minutes. Drain, rinse under warm water and drain again.

3. Divide noodles between 4 bowls. Place 2 chicken thighs in each bowl and spoon pan sauce over top. Garnish with scallions and serve immediately.
