2 3/4 cups all purpose flour
1 tsp salt
1 tsp white sugar
1 TBL active dry yeast
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried thyme (I don't use ground)
1 tsp dried basil
1 pinch black pepper
1 TBL olive oil
1 Cup warm water

1 TBL grated Parmesan Cheese
1 Cup Mozzarella Cheese

Directions:
Directions:
In a large bowl add the yeast, sugar and warm water. When it has started to foam/bubble, add the olive oil, flour, salt, garlic powder, oregano, thyme, basil and black pepper. Mix all together.

When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic. Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place for 20 minutes.

Preheat oven to 450 degrees F. Punch dough down place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese and whatever else you want to put on top.

Bake in preheated oven for 15 minutes or until golden brown. Serve warm.

I turn the light on in the oven and put it in there for the 20 minutes. The light gives off just enough heat to proof the bread.
