16 oz Greek Yogurt
1 Cucumber (Grated)
2 Cloves
2 T White Wine Vinegar
1 Clove Garlic
3 T EVOO
Salt
Black Pepper
Fresh Dill, chopped fine (add to taste, start with a small handful)

Directions:
Directions:
Peel and shred entire cucumber on box grater, pour off excess juice and place in bowl. Add a healthy pinch of salt and 1 tablespoon of white wine vinegar and mix well and set aside.

Next peel the clove of garlic and place it in a small blender (spice grinder) and add the EVOO in with the garlic. Then bend it until the garlic has disappeared and all that's left is a white mixture (No garlic chunks).

In a clean bowl add yogurt, EVOO and garlic mixture and 1 T of white wine vinegar, a dash of salt and some fresh ground black pepper. Then mix until combined and creamy.

Next squeeze cucumber in a towel to get rid of most of the moisture (you don't want a watery sauce). You will have a tight ball of shredded cucumber. Add that to the yogurt and stir well to combine. thoroughly. Taste and adjust salt, pepper and vinegar. Lastly, add chopped dill (to taste).
