Cupcake:

1 c, whole wheat flour
1/2 tsp. baking soda
1/4 c. olive oil or sunflower oil
1/4 c. organic natural peanut butter (make sure it does not contain xylitol)
1/2 c. organic unsweetened apple sauce
1/2 c. pure pumpkin puree
1 lg. egg

Frosting (optional):

1/2 c. plain Greek yogurt
1/4 c. organic natural peanut butter

Directions:
Directions:
1. Preheat oven to 350º.

2. In a large bowl, combine dry ingredients.

3. In a separate bowl, combine remaining ingredients and mix with dry ingredients.

4. Spray muffin tin with non-stick spray and spoon mix into muffin tins.

5. Bake for 20-25 minutes until toothpick inserted in middle comes out clean.

If you frost your pupcakes, mix yogurt and peanut butter and frost.
