2 lbs. shrimp, peeled and deveined
3/4 lb. orzo
1/2 c. olive oil
1/2 c. fresh lemon juice (3 lemons)
2 tbsp. salt
1 tbsp. pepper
1 c. minced scallions (white and green parts)
1 c. fresh dill
1 c. fresh flat leaf parsley
1 hot house or English cucumber, unpeeled, seeded and medium diced
1/2 c. small red onion, diced
3/4 lb. feta cheese, large diced

Directions:

Shrimp.

1. Preheat oven to 400º. Put the shrimp on a sheet pan, drizzle with olive oil, salt and pepper. Toss and put in a single layer on the pan.

2. Roast for about 5 to 6 minutes or until shrimp turns pink and curls. Don't overcook.

Orzo:

1. Cook the orzo according to the package. Add a dash of olive oil and salt. Drain and put into large bowl.

2. Whisk together the lemon juice, olive oil, salt and pepper. Pour over the pasta and stir well.

3. Add the shrimp to the pasta and stir carefully. Set aside for 1 hour for flavors to blend or refrigerate overnight. Bring to room temperature before serving.
