3-4 tablespoons of rapeseed oil
1 bay leaf
2 onions
1 tofu block
2 bunches of spinach, fresh & washed
Panch puran
3-4 cloves of garlic for the curry
3 cloves of garlin for the 'paneer'
1 teaspoon of coriander powder
1 teaspoon of turmeric
1 teaspoon of curry powder
1 teaspoon of chilli powder
Salt to taste

In a pan, add your oil and gently fry for a minute on low heat your garlic, then add your onions and salt.
While that is gently cooking on low heat, prepare your tofu. Cut into cubes and place in a bowl, add the crushed garlic and 2tsp of crushed of panch puran (crush in a pestle and mortar) along with 2tsp of curry powder. Coat the tofu. In a heavy pan, add a generous amount of oil to fry the tofu. Keep on medium heat, and fry gently until tofu is slightly brown on all sides. Make sure you flip the tofu gently to all sides. When it is cooked, take the tofu out and place in a bowl.
Once the onion is completely soft and slightly brown add all your powders. If you feel the onions are looking a little dry, add a little oil from the tofu or add water. Cook for about 6-8 mins. Once the masala is cooked, add the chopped spinach. Put the lid on and let that cook on a low flame. Once cooked, add in your fried tofu and the extra bits (fried garlic and panch puran). Switch the heat off, and garnish with some coriander!
