4 red peppers, halved and deseeded
1 tbsp Olive Oil
200g Red Lentils, washed
200g Baby Plum Tomatoes, halved
4 Garlic cloves, crushed
2 tbsp Soy Sauce
1 tsp Coriander
1 tsp Cumin
15g Creamed Coconut
Small handful of Chives, chopped
4 tbsp Flaked Almonds, roasted

Directions:
Directions:
Heat oven to 200°C. Line a baking tray with parchment. Put the peppers on to the tray and drizzle with olive oil. Season well with S&P and roast for 20 minutes, or until beginning to soften but still holding their shape.

Place lentils in a pan with the tomatoes, garlic, soy sauce, coriander and cumin and cover with 400ml water. Bring to a boil, reduce head and simmer for 15 mins, stirring frequently. Add the creamed coconut and simmer for another 5 mins.

Spoon the lentils in the peppers and return to over for 10 mins. Remove and scatter with chives and almonds.
